Delicious and healthy!
I decided to go gluten free over a year ago after having issues with digestion and headaches. I almost did not make it through the gluten withdrawal, it was brutal. However, I am happy for the changes in my quality of life since going gluten free. I do have to admit, I still crave Big Macs from time to time!
Veggies ready for stir fry
A few months ago I did a bit of research on foods that are beneficial for individuals with cerebral palsy for a blog post. I found that foods rich in calcium, protein and fiber are recommended. Additionally, Vitamin C and D are also very important. Since writing that blog, my mom and I have been trying to find delicious gluten free recipes which also incorporate the recommended foods for individuals with CP.
In our search, we also try to find recipes that are easy to prepare. Many individuals with disabilities rely on caregivers for meal preparation. Some caregivers are skilled in the kitchen, but some are not! Prep and cooking time is also a consideration, as our schedules can be quite hectic. Finding recipes that can be put in the freezer for later meals or recipes that make good leftovers is important as well because it is easy on the wallet.
Ingredients ready to go
This past week, my mom and I decided to whip up a stir fry with all those considerations in mind. This Chicken, Spinach And Broccoli Stir Fry recipe has many of the nutrient rich ingredients to meet the recommendations of a CP Diet. It is also gluten free. The prep and cooking methods of this recipe are quite easy. However, it is not a quick meal as it takes about 40 minutes to prepare. This recipe reheats nicely for leftovers and can be put into the freezer for future meals.

For this Chicken, Spinach And Broccoli Stir Fry recipe, I used my Imusa wok and a Rival rice steamer. I love this wok as it heats evenly and is perfect for a great stir fry. My Rival rice steamer gets a great deal of use in my kitchen. For this recipe, I used my favorite, Jasmine Rice.
