Protein and Vitamin C are essential in the diet of an individual with cerebral palsy.  Protein is a building block for bones, muscles and blood.  Vitamin C is essential for a strong immune system.  Eggs provide a protein and avocados provide Vitamin C.  And who doesn’t love bacon?!  Avocado Bacon Deviled Eggs are rich in protein, Vitamin C and BACON!

Avocado, Bacon and lime

Avocado, Bacon and Lime…a classic combination!

Speaking of bacon, I use nitrate free bacon to make Avocado Bacon Deviled Eggs.  Recently I have begun to tweak my diet.  Foods with nitrates did not make the cut.  Nitrate free bacon comes at a higher price, so I have cut back on bacon as a whole.  This recipe only calls for three slices, so it is economical and a nice treat! BACON!
