I confess, I am a cheesecake lover. Who am I kidding, I am a dessert lover! Since converting to a gluten free diet, I have given up much my old favorites, cheesecake included. While trying to find inspiration for a St. Patty’s Day post, my mom and I stumbled over several delicious dessert recipes. Actually, I did more than stumble, I drooled. Drooling sometimes comes with the territory when you have cerebral palsy, but this time it was dessert induced!
Every recipe we read had some gluten containing ingredient. My mom and I decided to take bits and pieces from several recipes in an attempt to come up with a delicious gluten free, minty and green delight. From my kitchen, we created Gluten Free Chocolate Cheesecake Bars. As we threw the ingredients together, we hoped we had the luck of the Irish on our side! According to my taste buds, the Irish luck was with us!
These Gluten Free Chocolate Cheesecake Bars were fairly easy to make. However, you need about 3-4 hours from start to finish because these cheesecake bars need to cool down and chill before serving. These cheesecake bars are gluten free, minty and green…a St. Patty’s Day Trifecta! If green cheesecake does not appeal to you, you can leave out the food coloring!
My local Pick N Save grocery store labels all the gluten free products. We shopped at Pick N Save for every ingredient listed (all labeled gluten free), except for the Goodie Girl Mint Slims (gluten free and non GMO!). We purchased those wonderful thin mint cookies at Walmart. They are also available on Amazon.com.
I absolutely loved these Gluten Free Chocolate Cheesecake Bars! If I had not known, I would have never guessed this recipe was gluten free. It took me back to the old days of footloose and fancy free eating! These cheesecake bars were creamy, minty and chocolaty! I plan on making them a St. Patty’s Day tradition!
